I have just started eating sweet potatoes and love them. Help with recipes would be great!

    Sweet potato hash browns! I love adding a some chorizo.
    Pancakes are awesome change from the norm.
    Got to love a sweet potato muffin too, love them for a carb and protein boost before or during a cycle.

    Lots of variations of these, quick google and recipes should be there.

    Previous posters your recommendations look great, looks like i have something new to try..

    Last night I had some sweet potatoes with onion, chicken breast and kale (and a good dose of curry powder, chili flakes, garlic and turmeric) and it was amazing :D

    I make a soup:

    3 cups cubed sweet potatoes
    1 can coconut milk
    1 cup vegetable broth
    1 Tbsp oil of your choice
    Salt, pepper, cinnamon, cardamom, nutmeg, and celery salt about 1/4 tsp each

    Heat the oil in a pot. Add the cubed sweet potatoes and caramelize on all sides. Add coconut milk and broth; reduce to a simmer and cook, covered, until potatoes are tender. Add spices, remove from heat, and use an immersion blender to blend until smooth.

    I do a chili - basically 1lb turkey, 1 chopped bell pepper, 1 large chopped onion, 4 minced cloves of garlic, 2 chopped jalapenos, 2 cans of petite diced tomatoes, 2-3T chili powder, 1-2T cumin, 1-2 cubed sweet potatoes, and several handfuls of chopped kale.

    Freezes great too.

    I love sweet potatoes roasted in the oven along with Brussel sprouts regular potatoes and onion and squash. Potatoes go in first because I like them really browned. I spray with olive oil, sprinkle garlic salt and pepper. Sometimes I roast chicken breast too on another pan. The other vegetables don't take as long and go on a separate pan. Moisture effects the level of yum. On the plate all together. The sweet and the savory and bitter is just an all around crowd pleaser in this house.

    Baked in the microwave or oven, then put butter, cinnamon and sweetener of your choice on it. Slice and fry in a pan with Pam or oil and then put cinnamon, butter, etc on it.

    I had one tonight just made in the microwave, but the topping was where it was at! I made a sweet sauce composed of Greek yogurt, sugar free maple syrup, stevia, cinnamon, vanilla, a small splash of lemon juice, and a pinch of salt. Topped it on my Potato.....it was amazing :love:

    Best combo ever! Roast whole sweet potatoes in the oven (much better than the microwave), mashed, add a dash of cinnamon and chili powder & salt. Make or use canned re-fried black beans. can be used in tacos or a dip or enchilada. Serve with avocado, cheese and sour cream optional (but it makes it even more awesome). My black beans are easy - saute chopped onion & jalapeno, add cumin, salt & adobo seasoning. Cook til completely soft, add a drained can of black beans and a bit of broth or water. Cook for 15 min to 30, mash the beans with a potato masher. If you added too much water, keep cooking til the consistency you desire.
