Ideas for ground lamb

I have a pound of ground lamb coming with my CSA this week, and am also trying to plan my meals.

Any ideas for healthy recipes? I'm figuring that I can just substitute it for ground beef recipes, but since beef allowed in my religious background I really don't have any ground beef recipes.

    These are really great. A bit of work but delicious.

    Stuffed Grape Leaves

    1[8 oz ] jar grape leaves, rinsed, drained and patted dry with clean towel
    1 lb ground lamb
    ¾ cup long grain white rice
    ½ cup finely chopped onion
    2 garlic cloves, minced
    2 Tbsp chopped fresh mint
    ½ tsp salt
    ½ tsp freshly ground pepper
    1 [8 oz] can tomato sauce
    1 cup cold water
    1 tbsp fresh lemon juice

    Spray a large non stick Dutch oven with nonstick spray. Place a plate in the bottom of the pot. Sort the grape leaves and spread any ripped or torn leaves on top of the plate. Save 24 whole leaves for stuffing.

    Combine the lamb, rice, onion, garlic, mint, salt, and pepper in a large bowl. Trim any tough stems from the grape leaves. Working with one leaf at a time, place 1 rounded tablespoon of the filling in the center of the bottom third of the leaf. Fold over the sides then roll up from the bottom to form a package. Place the roll, seam-side down, in the Dutch oven. Repeat with remaining grape leaves and filling to make 24 stuffed grape leaves.

    Combine the tomato sauce, water, and lemon juice in a medium bowl. Pour the sauce over the grape leaves in the Dutch oven. Place a heatproof plate directly on top of the leaves to prevent them from opening. If necessary add more water to make sure rolls are covered. Cover the pot, and bring to a boil. Reduce the heat and simmer, until the grape leaves are tender and the rice is cooked, about 1 hour. Transfer the grape leaves to a serving platter and top with the sauce.

    Makes 12 servings.

    Oh this sounds so good! My sisters Turkish mother in law makes a version with this using homemade tomato paste and bulgur.

    Exactly what I was thinking. Or you can make patties/burgers and make them gyro style. My local Greek restaurant does that.

    Shepherds pie :) I make mine with sweet potato & white potato mash and include carrots and peas with lamb & gravy.

    Hey so the recipe I ended up using was so incredibly damn delicious I have to share. Fair warning: it's pretty fatty!

    With one pound of ground lamb, I mixed in :

    half a cup of chopped mint
    half a cup of chopped cilantro
    3/4 tablespoon of ground coriander
    3/4 tablespoon of cumin
    3/4 tablespoon of cinnamon
    6 cloves of minced garlic
    1/3 cup of chopped onions
    cayenne and salt, to taste

    Go heavy on those fresh herbs! I sauteed the onions in two teaspoons of extra virgin olive oil before adding to the lamb mixture.

    After mixing thoroughly, I formed the meatballs on a baking dish. For me it came out to 20 meatballs, but you can make them any size you wish. I then put them in the oven at 375 for about 14 minutes. They came out medium rare.

    On the side, I steamed 2 1/2 cups of frozen mediterranean vegetables with 8 oz of fresh crimini mushrooms.

    I also prepared one cup uncooked of whole grain bulgur.

    If you're like me, you can divide this entire thing into four portions, which each come out to 550 calories. If you divide it into 5 (totally doable because it's very filling) it's 440 calories per serving.

    If I made this again I would add sumac and Urfa pepper flakes, but I didn't have any on hand. But this is delicious without!
