This is not an especially low calorie receipe compared to others I've seen on here, but it is certainly not high for what it is. Low carbers need not apply either, sorry guys.
This makes quite a good portion and is perfect for those that are a sucker for creamy pasta - like me.
You will need:
150g penne pasta
200g chicken breast
2 garlic cloves
1 red pepper
50g mushrooms
A handful of spring onions
A 200g tub of Philadelphia lightest
150ml milk of your choice (I just used semi skimmed)
Cajun seasoning to taste
1. Put the pasta on to boil.
2. Cut the chicken into bite sized pieces and fry in a little oil. I use the spray oil as it is virtually calorie free, but you could use normal oil (add the extra cals though).
3. Once the chicken has browned all over, add the garlic and peppers and cook for a further 2 minutes.
4. Now add the mushrooms, spring onions and cajun seasoning and fry for a further two minutes.
5. Meanwhile, add the Philadelphia and the milk together in a pan, and stir over a low heat until the cheese has melted and it has taken on a sauce consistency. I normally add some chives in too.
6. Mix together and serve!
This serves 2 people.
Cals: 550
Carbs: 74.7
Protein: 50.6
