Does anyone ever actually hit their potassium RDI?

I never even seem to come close.

    Labels aren't required to list potassium, so very few foods in the database have it. Odds are really good that you're hitting your RDI even though it doesn't show up in your diary.

    For example, I'm pretty sure the MFP listing for spinach shows 0 potassium

    Yes, but only if I use the USDA entries. If you log packaged stuff the potassium is not listed. I spent a week logging at cronometer with the USDA entries and convinced myself I was fine.

    I typically get 1/2 to 3/4 of the goal. I eat a lot of vegetables. Potassium is found in abundance in concentrated tomato, dried fruit, citrus, bananas. Already I push the sugar limit without consuming processed food. Good discussion topic.

    I also find that I hit mine pretty frequently, but I often have to look up potassium separately. I'm trying to keep my potassium lower due to a medication I take. Eating a serving of potato and avocado (like I only eat one serving of either of them. hah!) gets me almost halfway there. Beans, lentils, tomatoes or tomato sauce are also high in potassium.
