Spicy Kale, Corn and Mango Salad

I made this last night and thought I'd share. It was delicious and beautiful.

Spicy Kale, Corn, and Mango Salad

Serves 4

1 1/2 ear of corn, shucked with kernels sliced off
1 1/3 cup frozen mango pieces
21 cherry tomatoes, halved
1 jalapeño, seeded and diced
1/2 cup red onion, chopped
4 large kale leaves, spine removed, chopped into bite-sized pieces (was about 3 cups)
2 tablespoons salted capers, rinsed and soaked (I left these out because my daughter hates them)

1/2 cup of Country French Vinaigrette made from Penzeys' mix -- or your own vinaigrette (I cheated and used 1/2 cup Kraft Creamy Caesar)

Combine vegetables, add dressing. Marinate for about an hour. Serve.

With the changes I made, for 6 side servings: 162 cal, 21 carb, 9 g fat, 3 g protein. 3 g fiber

    looks yummy! I typically just do a massaged kale with mango and pepitas salad. This would be a nice change, thank you for sharing :flowerforyou:
