Does anybody have good nutrient-dense recipes or ideas for Meatless Monday?

    Chili without the ground beef. Lentil soup.Stir fry with chick peas instead of chicken.

    Really any meal you would normally make with meat, just leave out the meat.

    Spaghetti with a vegetable packed sauce
    Beans and rice
    Minestrone soup
    Lentil soup
    Tomato soup with a grilled cheese sandwich
    Veggie burger and salad
    Broccoli, cheese and rice casserole
    Eggs with vegetables, cheese or fruit
    Salad with spinach, egg, roasted potato, peppers, tomato, etc
    Black bean wrap or empanada
    Spinach and cheese manicotti

    This is a great recipe and if you follow the directions they taste incredible! There is even a video you can watch so you know you are doing it right.

    I got this from WW's. I haven't yet but think you could sub butternut squash. Love love love this recipe

    Delicata Squash, Chard and Chickpea Curry

    1pound(s)uncooked winter squash, delicata squash variety (unpeeled)
    1cup(s)light unsweetened coconut milk
    1Tbspcanned tomato paste
    2tsplow sodium soy sauce
    1Tbspolive oil
    1⁄2cup(s)uncooked onion(s)
    2clove(s)garlic clove(s), smashed
    1Tbspcurry powder
    2cup(s)uncooked Swiss chard, young, torn leaves
    1 3⁄4cup(s)canned drained chickpeas, rinsed and drained
    1⁄2tsptable salt
    Instructions

    Step 1
    Cut washed squash in half lengthwise; remove and discard seeds and stringy flesh. Place each squash half, cut side-down, on a cutting board; slice each half into thick quarters and then cut each quarter into 1/4-inch-thick slices.
    Step 2
    In a small bowl, combine coconut milk, tomato paste and soy sauce.
    Step 3
    In a 2-quart sauce pan, heat oil over medium heat. Add onion and garlic; saute until onion begins to soften, 1 minute. Add curry powder; stir until fragrant, 10 seconds. Add squash, chard and coconut milk-mixture; increase heat to medium-high and bring to a boil. Reduce heat to medium-low and cover; simmer, stirring occasionally, until squash is tender when pierced with a knife, 5-7 minutes. Add chickpeas and salt; increase heat to medium and stir until chickpeas are heated through, 2 -3 minutes.
    Step 4
    Serving size: 1 1/4 cups.

Vegetable and grain salad or baked casserole. Pasta with sautéed vegetables. Shakshuka/eggs in purgatory. Guacamole, bean, and/or grilled vegetable tacos. Egg salad. Bread salad and vegetable soup. Mushroom burgers. Ratatouille. Stuffed roasted tomatoes, peppers, or squashes. Vegetable turnovers made with phyllo.

    You could make it your weekly Breakfast For Dinner Day. Porridge with fruit and nuts, waffles, huge smoothies with protein powder.
