How can I make healthy meals ( low carbs ) with out using noodles, rice ect. To stretch enough to feed all of us 6 adults and 2 children

    Have you tried a crock pot (slow cooker)? It's fantastic for low effort meal making. There are tons of recipes on the web. As a substitute for rice or noodles you can use beans. One meal on the crock pot can easily feed 8 (large crock pot) cleaning is easy since you only use the one pot and it's warm and ready to eat for a long time. You can start it in the morning and have it for dinner. I make very nutritious meals with boneless chicken or pork chops, celery, red pepper, pasilla pepper, onions, carrots, olive oil and canned tomatoes that come out at around 350 to 400 calories.

    I find the Harcombe Diet book a good read, as with the Harcombe diet recipe book,lots of low carb meals in them.

    Healthy and low carb are very different things. You can eat very healthy and eat carbs, you can eat complete garbage and be low carb. So I do not understand this part of the problem.
    Anyway , to get back on topic, depending on the kids ages, low carb might not be a good idea for them, plus I imagine 8 people will have a hard time loving the same things. What I would do would be to use meat, fish or chicken as the basic ingredient, then offer different side dishes so everyone can pick what works for them. Like a green salad for the ones being low carb, some starch added for the ones who do not follow this eating style.

    Butternut squash is fairly low carb. Put it in the oven whole and cut it after it is soft and easy to work with.
    Look to stir fries or roasted/grilled vegetables: onions and garlic with any of these -- green beans, eggplant, zucchini, swiss chard, broccoli, cauliflower, kale, carrots.

    Remember that when one reduces carbs, the fats and oils increase: cheese, sour cream, butter, mayo, full fat salad dressing, bacon, olives, whipping cream for coffee.

    How much money do you have? Carbs are nice because they are usually comparatively cheap vs meats etc. But why low carb for the whole family? Carbs are part of a balanced diet, and 40-50% of your macros should still be carbs (unless everyone in your family is on atkins). Instead of switching everyone to a low carb regimen, why don't you try to substitute refined carbs with whole grains, etc.
