Plates

Ok so I've been going to the gym for the past 2 years and I've seen the black plates and the red or yellow plates with holes in them and i never used the colored plates so my question is what's the difference between them?

    I have a pretty nice China Cabinet full of Yellow and red plates, and the ones with Holes i use them to drain pasta when i have fancy company over for dinner
