Pinterest! I found a great Low Carb Jalapeno popper chicken recipe that I adore, and my kids like it too. I like to do a chicken parmesan meal that is non breaded and taste great.
Brown boneless, skinless chicken breast- in preheated oven 350 degrees, add chicken breast to baking dish, cover with fav pasta sauce, and top with low fat Mozzarella cheese. Bake for 30- 35 minutes. As I'm gluten free, I eat it just like this, but my children have it over pasta. It's fairly quick, and once it's in the oven, I have a 30 minutes workout.-1 -

We have stir fry about 4 nights a week, but it's different every time!
I vary the meat, veg and accompaniment... Sometimes rice, mostly brown rice noodles or spiralised veg. Oil might be coconut, sesame or vegetable. Flavourings might be soy sauce, fish sauce, rice wine vinegar, lemon, lime, ginger, garlic, chilli, Szechuan peppers, star anise, five spice, cumin, coriander etc etc.
It never gets boring!1
