What's. Difference in oatmeal and oats ? What's the best to eat in protein ?

Protein isn't "big" for any type of oats. I eat oatmeal for the fiber (Both soluble & insoluble fiber). I add protein by making it with milk, I add healthy fat by adding nuts. These give my oatmeal staying power.
Personally the differences aren't huge. I eat the oats that have a texture that I like.
Steel cut - whole oat groats that have been husked and "chopped." Firmer, almost chewy texture (cook in 20 minutes generally). Instant steel cut gives you most of the texture, but in 5 minutes.
Rolled (old fashioned) - whole oat groats that have been husked, steamed and then rolled. A longer cooking instant oats (5 minutes). Less baby food texture
Instant - - whole oat groats that have been husked, steamed and then rolled thin. A quicker cooking instant oats. Baby food texture.0
