Leftover Oven Roasted Vegetable Uses

Last night I made a pan of oven roasted eggplant, squash, zucchini, mushrooms, and onions for a side dish. Any suggestions of what to do with the leftovers besides eating them straight or putting them on some toast with goat cheese?

    Put them in a wrap with some flavoured hummus.

    Toast with goats cheese sounds amazing... I'm totally trying that.

    Cut them up and make an omelette?

    Top them with a runny egg
    Make a burrito (if you have a lot you can make freezer burritos) or enchiladas
    Put them on a pita or flatbread for pizza
    Eat them on top of rice with or without cheese
    Mix with marinara and eat them over pasta
    Quesadillas
    Add them to salad

    Mix up a lemon vinaigrette dressing (lemon juice, a teaspoon of dijon mustard and olive oil, salt & pepper). I like adding the vegetables and lemon dressing to either couscous, bulgur or quiona. Add in chopped parsley or basil, feta cheese, black olives or pine nuts (obviously these are calorie dense foods, but super flavorful). Awesome the 2nd day! Original recipe is from Barefoot Contessa and she served it over orzo pasta and with way too much oil, but the flavor is delish!

    Blitz them with some stock into a soup, I love roasted veg soup and will often roast veg to specifically make soup with! :D Serve with a nice thick wedge of crusty bread... Mmmmmm!

    What are left over roasted veggies you speak of. I am lucky if the make it to the table. You might use them in a frittata. Yum

    I love to throw them into a quesadilla or into a serving of pasta with balsamic.
