Breakfast ideas

OK, so I usually vary my breakfasts a little bit. Some morning's I'll have just fruit with Greek yogurt, some mornings I'll have 1 poached egg, 1 slice of toast (no butter) and some fruit, some days 3 poached eggs, 2 slices of toast and no fruit, but I wouldn't mind mixing it up a little bit! I sometimes cook up an omelette, but I despise having to use oil or butter to lube the pan up, so I tend to steer away from omelettes. I was considering eating porridge (mainly that flavoured porridge) but I have heard mixed reviews on eating it (especially when on a diet) and I was wondering, "just how healthy is porridge"? Some people say it's great, it promotes a slow release energy fix and tides you over until lunch dinner. Some say it's terrible, you need to use milk and sweeteners to make it enjoyable, thus making it a not so healthy breakfast option.

So, who out there likes/dislikes porridge? Is it something I should consider eating for breakfast, or should I stick to the fruit and poached eggs? Also, any other breakfast ideas would be muchly appreciated!

    I never use butter or oil to grease the pan for omelettes, I spray a little cooking spray (not much) and it works just fine. My omelettes have 4 egg whites and 1 whole egg (to boost protein without overdoing the calories...it's not cause I fear whole eggs or something) and I change up the seasonings and toppings all the time. Right now, my 2 favorites are just cheddar cheese and salsa or spinach, mushrooms, tomatoes, sliced deli ham, and Parmasan cheese. I also like onions and peppers seasoned with chili powder, or shrimp and mozzarella cheese seasoned with garlic and pepper.

    I also like to put jam on my toast...no butter for me there either, but that's mainly cause it tastes better with jam.

    To season porridge, you could use protein powder instead of sugar or sweeteners. I like to cook oatmeal with water, add some protein powder and cinnamon with some fruit (usually strawberries or apple pieces) and it tastes sweet enough without sugar or sweeteners, plus it is packed full of protein and fiber.

    Also remember that you don't have to have "breakfast food" for breakfast if you don't want to. Experiment with your favorite foods and see what you can come up with. I've been known to have chicken and veggies when I wake up, lol. As long as I get my calories and macros, it doesn't have to be "breakfast food."

    I have porridge sometimes. Actually that's often on the days I find it easier to stick to my calories. I always make my own, those flavoured packets contain nasty stuff that isn't necessary. I use 1/3 cup each of rolled oats, water and trim milk. Sometimes I stir in some stewed apple, it cools it down faster and sweetens it, other times I do add a couple of teaspoons of brown sugar (yeah, I know, not ideal but still less sugar than some other breakfast cereals!). Oats are awesome, I love cooking and eating things with oats.

    I'm also keen on Special K with some trim milk - great when I'm in a hurry and in summer, I often have fresh blueberries with them.
    Tomato on toast - I usually have a little bit of cheese for some protein with it.
    Scrambled or boiled egg (instead of your poached egg).

    What about bagels? Not sure how they stack up nutritionally, I don't like them for breakfast (more of a lunch thing for me).

    I love porridge with banana, usually the banana is so sweet I don't need sugar or sweetener, I use soya milk, so there's loads of vitamins and calcium etc. My mum's started making jam so I've been having a lot of toast just lately! Lol!!

    Put 1/2 cup of oatmeal, 1/2 cup milk, 1/2 cup yogurt in a container in the fridge overnight and add fruit and cinnamon in the morning before eating and voila! breakfast.

    eggy oatmeal

    1/4 cup oats
    1 tbsp milk (i use unsweetened almond milk)
    brown sugar to taste
    1 egg
    small handful of blueberries

    i mix the first 4 ingredients in a large coffee mug, then lightly fold in the blueberries.
    heat in the microwave for 1:00.

    I'm very simple - 2 eggs fried, yolks broken in bacon fat. A little piece of heaven.

    I have a mister with oil so just a spritz is enough to make sure eggs don't stick!

    I love overnight oats:

    1/2 cup quick oats
    1 cup milk (dairy, almond, soy all work well)
    2 tbsp. chia seeds, ground flaxseeds, or wheatgerm
    1 scoop vanilla protein powder (optional, but helps you stay full)
    1 tsp vanilla (optional)
    natural sweetener to taste (eg. honey, agave, maple syrup, brown sugar...) (optional)

    Combine everything in a container, throw in the fridge overnight, and eat in the morning. You can heat it in the microwave if you don't like cold oats, but it's refreshing in summer. I add dried or fresh fruit just before eating. So good!

    I have a real sweet tooth, but I find that a bowl of oatmeal with a tiny teaspoon of Nutella mixed in is incredibly satisfying (and much healthier than, say, eating half a jar of Nutella on a spoon...not that I've done that before...:laugh:)

    I generally don't have the patience to make omelets (and I also don't like using the cooking oil/sprays) so I cheat and make veggie egg scrambles. I'll chop whatever veggies I have on hand (onions, mushrooms, bell peppers) and gently heat them in a dry pan, then toss in a huge handful of spinach. As the veggies wilt, they release quite a bit of their water content. I'll transfer them with a spatula to the bowl I'm going to eventually eat out of. Then toss in your eggs and a splash of milk. Scramble the eggs - the veggie water will help keep the eggs from sticking to the pan - magics! Add the veggies back in, top with a pinch of cheese, some pepper - et voila! - breakfast!

    I keep my breakfast kinda boring. *shrug*

    + 2 eggs, 2-4 slices of turkey bacon, a slice of whole wheat bread and some jam
    + Protein shake
    + 1/2 cup oatmeal prepared with water, 1 tsp of brown sugar and 2 tsp of flax seed, and 2 eggs
    + Greek yogurt with mixed berries and granola
    + A half cantaloupe filled with greek yogurt and granola
    + 2 slices of whole wheat toast with cream cheese and jam, a small fruit and an egg or 2
    + Veggie omlet with cheese
    + Homemade low cal muffin with peanut butter

    Always served with a cup of coffee and a dollop of almond milk.
