Vegetarian looking for good beans/legumes recipes

I am vegetarian (well actually pescetarian), but would like to reduce and eventually cut out my fish/shellfish protein. I have started to incorporate more tofu in my diet, and I do eat eggs, but as of late I have cut out dairy. I know I could do well for my protein intake and even my satiety (as I feel I am hungry a lot) if I turned towards beans/legumes..so here I am.
I need some good recipes. There are not really any beans or legumes I have had that I don't like. I also do like spicy stuff or non spicy stuff. Only request is that the beans don't turn out overly dry. I prefer to use dried beans but will use frozen (or fresh if I ever find them) and canned (if necessary).
Look forward to hearing some recipes you really enjoy.

Hey! I use the website https://myvega.com/recipes/ ALL the time as it really give wonderful recipes. They are more vegan but you can change ingredients as well. I made buffalo cauliflower bits last night - so good! I do a lot of rice paper wraps as well with raw vegetables and make a dairy free peanut thai sauce dip.0

I make a tomato-based soup with several different beans and some spices (to taste). I tend to blend it took, so that it's smoother (and since I make 6 portions at a time, it's easier to measure out a more equal amount). The soup is easy to make and I will often add other veggies (root veggies mostly) if I have "a little of this" or something is about to turn. I call it my "old clothes soup" after a funny line in a classic Swedish movie.
What I wanted to say too is that mixing the stew (which it started out as) into a soup lessens the chance of the beans feeling dry, even if they have been once. You'd need to cook them separately first though; but once done it's quick work for the rest (in fact, the only reason it takes about 30 minutes is because of the assembly and then the lentils I use needs time to cook).

There are several bean cookbooks out there that are really good. You could probably find them at your public library or place an interlibrary-loan order.

Crockpot
-Navy beans, black eyed peas or kidney beans
-Put clean dry beans and add water so the crockpot is 3/4 full of water
-add: diced onion and tomato, salt, pepper, onion and garlic powder and smoked paprika
Put on high and let cook overnight, or put on in the morning and leave on high until after 6
(Season again if needed)
(Or Until beans are tender)
You can always throw out the excess water or eat them like more of a soup.
Eat plain, with hot sauce, avocado, rice or tortillas.0 -

Look for French and Indian lentil (dal) recipes. They're dried, cheap, and cook fast. Madhur Jaffrey has great recipes.0

Vegan Habichuelas guisada
1 can Pinto beans (I prefer fresh beans, soaked and softened)
2 C water (or vegetable stock)
5 Tbsp Fresh Sofrito
1 Potato or handful of Calabaza (pumpkin) peeled and cubed
2 Bay leaves
Sazón
1/2 tsp Smoked paprika
5 Spanish olives
1 Tbsp Annato oil
4 oz. Tomato sauce
Directions:
Heat oil annato oil and saute the sofrito for about 3 min. Add the tomato sauce, sazón, olives, smoked paprika, and bay leaves. Saute for another 2 min. and then add the beans potato/calabaza, and water/veggie stock. Bring to a boil then simmer on Med/low heat until potatoes soften and sauce thickens. If it's too watery try mashing some of the potatoes in the sauce, it will thicken it right up (a little trick my mom showed me). Serve with fry bread. Open them up and fill them, or dip them. It's the best comfort food you'll ever have!

I'm on a lentil kick right now. Red lentil soup is super easy. I like to saute onion, hot peppers (jalapeno, Serrano or banana peppers), garlic & ginger. Add in cumin, red curry paste - and maybe some tomato paste, to the onion mixture. Then add lentils and water. Cook about 30 minutes and it's awesome, cheap and super flavorful. I also add in chopped tomato if I have it and 1/2 can of coconut milk. It's the bomb! I also bought an Ethiopian spice mixture called Berebere that I sub for the curry paste.
I'm a big fan of 3 bean chili - no meat (sorry Texans!).
Hummus can be made a million different ways with chickpeas or white beans. Great add-ins are olives or roasted red pepper.
Black bean/sweet potato is an unbelievable flavor combo. I sometimes eat it plain or on a tortilla. Add sour cream or cheese and avocado.

This is a very simple Brown Rice and Lentil Casserole. Just leave off the cheese if you're not eating dairy. It's basic, you can flavor it up any way you like. You can make it with Mexican or Indian ingredients added, whatever you like! I made it for Thanksgiving with some added poultry seasoning and chopped celery, and my vegetarian daughter (and the rest of us) loved it.
