I try to figure out my meals for the next day after dinner and I try to log most of it ahead of time. I find when I have already logged the food I may as well stick to it. Lunch usually ends up being a left over from previous supper. I get up a little early so I can cook some eggs.
Dinner sometimes it takes most of the morning to come up with some idea of what I'm having for supper.
Preparation is huge when your not prepared it's easy to slip up!

I don't have a solid plan, but I watch the grocery add. This past weekend I pick up a bone-in turkey breast for $1.79 a pound. I tossed that bad boy in my 6 quart crock pot with onions, seasonings and a bit of chicken broth. Cranked it up to high for 6 or 7 hours, and now I've got shredded turkey for the week. I only have to think about sides and whether I want a wrap or a sandwich or a hash or what ever.

My crockpot and pressure cooker are my staples of meal prep. In the crockpot, I'll put 5lbs of chicken, pork, or beef, a couple cups of stock, let it cook all day, shred, and have meat for the week. You can put some over salad, stir fry with some soy sauce and veggies, add taco seasoning, mix with bbq sauce, the possibilities are endless! The pressure cooker is AMAZING! I throw in a variety of veggies, stock, seasonings and several pounds of meat. In less than 30min, you've got a giant pot of stew/soup for the week. I don't mind repetitive eating so having a handful of the same meals for a week is ok with me. I change up what I make each week but those two kitchen tools are key!

I make a seven day meal plan based around what veggies are in my garden and what meats I have in the freezer.
