Back to exercise & healthy eating after a year of being a couch potato

Recently I've put on 20 pounds, being a couch potato, no exercise and eating freely. I decided today to start exercising. I started with walking and midway into my walk I realized I wanted to do some light jogging in between. I know I have to start slow, but I feel that 25-30 mins of moderate walking isn't enough. I want to do more without over doing it.
I am 5'3 at 160. I used to weigh just under 200 back in 2009. I started working out at the gym only using the elliptical and treadmill for cardio for one hour total daily. I started portioning my food. I lost 30 pounds in one year doing that. Then the following year I discovered special k and subway. I became obsessed with eating special k or activia for breakfast, then subway for lunch (wheat bread 6 inch, turkey, no mayo, veggies) baked chips, diet drink, then whatever we planned for supper. After that year, another 30 pounds lost, with hardly any exercise. After 2012, I got married and moved away from home. I became homesick and depressed, and started eating unhealthy. Lots of restaurants and takeout, lots of unhealthy choices. I put on 20 pounds since then. In 2014, I started an exercise program at home, treadmill HIIT and some light resistant training with my resistance band. I also started eating healthier like egg white omelette with veggies for breakfast, tuna or chicken breast with salad for lunch, healthy snacks in between like handful or almonds or fruit, and baked salmon or grilled chicken for dinner with veggies. Of course, lots of water. I started maintaining my weight and got down to 143. Then I let go. Last December, my grandfather passed away during the holidays and you can only imagine not wanting or thinking about staying fit. I lost all control and just ate regularly. No exercise, just Netflix, cookies, chips, junk. The weekends are lots of going out to eat and careless drinking. I noticed my clothes fitting tight and feeling tired. I also oversleep and wake up feeling like I want to sleep more. This could be a sign of depression but I know I can get out of it. I want to go back to being healthy and getting fit. I know 20 pounds isn't that much to lose. My husband tells me I don't have to lose weight and he's happy the way I look but I am not happy. I feel like I am wearing someone else's body. I feel like I'm heading back to the body I had in 2009. I can't go back there. So today, when I started my walk, it felt good, and I wanted to do more. I know I have to start slow but my mind tells me to do more. How much can I do even if I'm just starting out again? I am planning to prepare a meal plan for the week of healthier foods and push myself to drink more water. Would it be okay to exercise in the morning and at night too? I am not expecting to lose the weight overnight but I would like to lose 10 pounds in one month if I can. Small goals. Does anybody have any recommendations or similar stories they would like to share?
