Roasted Frozen Vegetables (Veggies) Recipes

Hello,

I am looking for recipes using Frozen Vegetables (Veggies). Simple ones. I tried it 6 months ago and forgot how to cook them. I know I drench in olive oil and put seasonings on them. Going to try again today, just need to know what degree to roast on. I know fresh is better but to start I am looking for super easy.

    I make roasted veggies a lot, but from fresh, not frozen. I especially love cauliflower, tossed with a touch of olive oil, sprinkled with SeasonAll, cracked black pepper. Spread in single layer on a cookie sheet sprayed with a touch of Pam, roast @ 425 for about 20", or until just tender. You can also add a little more flavor by sprinkling with a little parmesan cheese for the last few minutes of oven time.

    I haven't tried it from frozen but I read somewhere 450 degrees and to be sure to space out veggies well since the water from frozen needs to evaporate, and you don't want mush vegetables. If you are successful, let me know how you did it!

    I actually was planning to roast some broccoli this evening from a frozen, thawed bag. I'll let you know how it goes!

    OK...so I thawed a bag of frozen broccoli, put it on paper towel and dabbed paper towel on top to get off as much moisture as possible. Then I drizzled olive oil on and minced garlic, salt & pepper. I started roasting it at 450 degrees...kept it that high for about 15 minutes, then lowered it to 375 for another 10 minutes. The high temp evaporated the extra moisture and it turned out SO FREAKIN' YUMMY!!!!

    Sometimes I use olive oil, sometimes, I just spray my olive oil cooking spray to be a little "lighter". Always season with s&p, and I have been using this massive Italian pizza seasoning that I got from GFS about 6 months ago that I rediscovered after hubby "helped" me and cleaned up the pantry.... and as a matter of fact, I'm eating roasted veggies tonight, tomorrow, and the day after for lunch :)

    I was going to comment that they would be too wet to roast but doing them at a high temp and then bringing it down sounds like a good idea.

    I still prefer fresh roasted vegetables but in a pinch it's not a bad idea.

    Thanks! I am going to try this!! I will let you know how it turns out. I am having surgery Thursday so it will probably be next week. I have a huge bag of veggies to try it on. California blend! I have to make myself eat more veggies. I have already started by eating veggies 1st.

    I made a huge batch... two cookie sheets completely full... and I eat on it for my lunch at work for a couple/few days.

    I normally put it in a microwave container, my protein on top (chicken breast today), and microwave it for 2-3 minutes.

    Fry them with cooked rice and soy sauce. easy vegetarian fried rice ^^

    Do you cook them from frozen or do you defrost as earlier broccoli timing suggests? Great to know this can be done, have to try it now from frozen.

    i cook them straight out of the freezer. Dont defrost them...thats when they turn limp and mushy.

    Hello! Well I just put my VEGGIES ON!! YAY!! Going to have them for breakfast. I am determined to have some good ole veggies today! :laugh: Tired of baby carrots raw. They are smelling great!

    So you used frozen veggies, tell me exactly what type you used and how long you cooked, etc. etc. etc. I would like to try to and want to see if I have the right food and recipe in hand. Did you salt and pepper, did you turn veggies? Did you put on preheated tray? I know I am making this more complicated then it should be. I am pleased we blanched sugar snap peas tonight, and that took me a few tries to figure out the timing!

    I used Kirkland Normandy mix veggies from Costco.
