Everyone I put in my cardio it always says I burned like 3x the calories the machine says. Is that because machine gives a general number and here it averages out how many calories I would burn doing it based on my weight? I'm confused

Check any number of on-line calculators and they will provide different estimates also. It's true your height, weight, age, gender, exertion level (and more) help determine calorie burns. Even a heart rate monitor is an estimate, although it's pretty good for steady state cardio.
My advice.....put in the lowest number, even that may be too high. Then if using MFP as designed eat a portion of those calories back (50-75%). Then tweak this % up or down depending upon actual weight loss results. After a time you will get a pretty good idea of what your calorie burns are.0
