Low calorie chocolate cake

Ingredients
(I know you can find them at sainsbury's. No promises made that they will be available at other shops)

For the Cake Mix

250g of Butterlicious Light - 875 Kcal
75g Low calorie sainsbury's hot chocolate - 245
4 medium free range eggs - 304
1 tea spoon of vanilla extract
300g of Doves Organic wholemeal self raising flour- 915
400g caster sugar Billingtons - 1, 592
50ml Sunflower oil - 414


Method

Pre-heat oven to 180'c - Layer to tins with butter or baking paper
Add 200 ml of boiling water to hot chocolate and mix until no lumps. (best way is to add a tiny bit of water and mix it until all the power has some wet on it and then add more and more water in, mixing as you go)
Siv the wholemeal self raising flour, from height to allow air, into bowl. Add two tea spoons of baking powder.
Then, add 2 tea spoons of vanilla extract and mix.
Slowly start adding the other ingredients, mixing as you go. So the 4 eggs (Make sure they are at room temperature) all the caster sugar, the sunflower oil, melted 250g of butter.
Mix it all together by what-ever means. Spoon/electric mixer.
Pour into two cake tins and put into oven for 40-45 minutes. Don't keep opening the oven door. when it's at 40 minute's, then check with a knife. Poke it in the middle and if it come out clean, it's ready.
Put the cakes on a wire rack to cool. After ten minutes, take out of tins and leave on wire rack to cool for a little longer.

Butter Mixture

150g butterlicious light - 525
300 Billingtons icing sugar - 1,191
2 tea spoons of vanilla extract

Method

Have the butter softened and ready. And 150g of the icing sugar to the butter and mix until fully incorporated. Then add the next 150g and mix again until no sugar goes unnoticed.

Take one half of the cake and lather the butter cream onto the flat side. Then sandwich the two pieces together and sprinkle some icing sugar on top.

If cut into 12 it's 505 calories a slice
If cut into 14 that's 432 calories a slice.

I'm going to keep trying to find ways to put less calories in.

I hope you enjoy this. Loosing weight is hard without allowing some healthier options of snacks.
