Meal preps with chicken, help!

I need ideas! Preferably without rice, and something that gives me a good boost of fiber. Please!!

    Chicken burritos.

    Roast chicken, shred, add spices. Serve 116g on a Mission Carb Balance wrap with 130g of black beans and 28g of shredded cheddar cheese or 70g of avocado.

    A whopping 18.5g of fiber per burrito.
    470 calorie dinner.

    we eat a lot of chicken tacos or taco salad. The corn tortilla and beans adds a good amount of fiber.

    Chicken and cauliflower rice is a staple for me (regular rice is evil for my blood sugar). It's easy for me to add variety by adding sauces/cheese/olives/salsa/dressings/other vegetables and legumes.
