Does my Fitbit pick up all calories burned doing Strength Training?

If I do Cardio I know my Charge HR picks it up, but what about sitting at the equipment doing chest presses, leg presses, etc. Does it pick that up? Or do I have to use the Exercise option to log in all the Reps, Weight. etc.

HRMs are only good for steady-state cardio. Your best bet would be to log strength training (and any other exercises you can't reliably track) in the Fitbit app, and the calories will transfer over.0
