Amazing Sweet Potato Salad

I found this recipe in the Whole Foods Market magazine "Extraodinary Health" I only made a few changes, substituting Craisins for raisins, and using half as much red bell pepper,and juice from a whole lemon. It seems to be best made the day before so the flavors can blend.

AMAZING SWEET POTATO SALAD:

Serves 4

Ingredients:
2 pounds of sweet potatoes ( I weigh before baking)
2 red bell peppers, thinly sliced and diced ( I use one)
4 Tablespoons of raisins (I use Craisins)
3 Tablespoons lemon juice ( I use the juice of one lemon, which is usually more than 3T)
3 Tablespoons chopped parsley
4 Tablespoons organic extra-virgin olive oil
3 Tablespoons chopped fresh rosemary leaves
1/3 cup sliced raw almonds

Directions:

Bake sweet potatoes in 400 degree oven for 45 minutes.
Cool and peel and cube.
Place in large mixing bowl and set aside
Mix: olive oil, red pepper, *onion,rosemary, parsley, lemon juice and raisins
Add to the cooled sweet potato cubes.
Mix well.
Chill
Top with sliced almonds and serve.

* ( onion was not listed in ingredient list, so I did not use any.)

This is a very pretty salad using yams(sweet potatoes) I'm taking it to a family ribfest in a few weeks.........

    I found that measuring the herbs was difficult, so I had to approximate the amounts. Rosemary has a very powerful flavor so it is best to approximate it and then chop it finely. I've made the recipe twice now, and found the flavors were more balanced when I chopped the herbs a little smaller. I really love this recipe, a low calorie, colorful and uniquely flavored side dish.
