I love roasted vegetables. Just cut them up, season with salt and pepper, toss with olive oil. Bake at 425 for about 20 minutes (or until they are a dark golden brown) turning them half way through.1

I agree with Lucy, however I would also add a few cloves of garlic (you don't have to eat these if you don't want to) and some hard woody herbs such a thyme (my personal favourite) it gives the veg a little something else.
