Does fat percent in ground beef matter? If the beef is cooked before using in a recipe and the fat is poured off, is the remaining meat the same regardless of how much fat you start with?

It matters. According to the USDA site 100g of 80/20 browned and crumbled is 271kcal. 100g of 90/10 browned and crumbled is 230 kcal.0

Thanks for that link - I didn't know it had been studied, but it makes sense to me - the fat liquifies and we rinse it away. Every now and then the price difference between 80% and 90% is substantial.0
