Blue Potatoes

What is a good thing to do with these?

    They really add color to a side dish. Get a mix of new potatoes, sweet potatoes, and blue potatoes, cut them into chunks, and roast them with rosemary, or do a gratin dish, or slice them thin, bake them, and make chips. Blue potatoes and carrots also look pretty with each other.

    Make your favorite potato salad and top with chives, the blue-purple color will really pop.

    My absolute favorite dish I've ever eaten with blue potatoes was octopus salad. Roasted blue potatoes, grilled octopus, greens, dill, and a light but creamy dressing. It was pretty and so delicious.

    If they are the size of the new potatoes (small) then I always roast them in some EVOO or avocado oil along with salt & pepper and a little parsley. It's so good!
