    I'm scared to eat 3000 calories a day cause I don't want to gain weight. I've also been taking multivitamins and fishoil.

    You won't eat 3000 a day. Go for 2500, that is 1000 a day deficit give or take, and that will mean 2 pounds per week, a very respectable loss. I know the desire is to go fast, however, losing fast doesn't allow you to learn good eating habits or get used to a reasonable calorie amount. 1600 is only 100 above what is considered to be the minimum calories for a man, and some set that number at 1800. Since you are above average height, I will say it is far to low. As for weight loss, it is not linear. You lost a lot at first, probably far faster than you is ideal, now things have not moved for a bit, but if you average the total over the number of weeks you have been doing this I am guessing the per week amount looks pretty good.

    So,

    1) Eat more, I would suggest 2500 calories and measure how much you are eating carefully. You are not doing yourself any favors eating as little as you are. Yes, the weight will come off fast, but you will lose a lot of lean mass.

    2) Stop expecting consistent weight loss.

    3) Take other measurements (chest, waist, hips at the very least) and take pictures. I suggest this because some people will go through stretches of weight not changing, but measurements going down. Eventually the weight does follow, usually in a fast loss, but measurements and pictures can show progress when weight does not.
