Vegans Wanted

Hi to all!
I'm a 59 yr old female who has gastric puresis, in short it means my stomach no longer works. For the past 5 years since emergency surgery, I found out this year that the Vegas nerve in my stomach no longer tells my stomach to be hungry, doesn't tell it to put in acid, nor does it tell my stomach to eliminate. Fun right! So after gaining 100lbs, due to meds and not eating right for my condition, I need the lbs off! My dilemma is I'm a country girl, that means, fried chicken and the added goodness that goes with it. Also, now no protein, no dairy, no fresh vegetables unless cooked and no fats! I don't know a single thing about vegan, now not totally vegan cause I can tolerate fish if grilled or baked. Oh and beans which are a high protein, my stomach says NO! Nuts are out too. So I have been living on oatmeal, rice, cooked vegges, fish and it's so boring ! I know there are great dishes out there but not a clue on which spices to use since the old stand bys aren't working. If anyone out there is willing to help, I'd so appreciate it.
