So, why do the goal numbers change on a daily basis? I must have been absent on that day!

The % should stay the same, but the exact grams that % is will change if your calories increase from logged exercise or adjustments.
Example:
30% protein
30% of 2000 = 600/4 = 150 g
30% of 1800 = 540/4 = 135 g
30% of 1600 = 480/4 = 120 g
