My fiancé and I have been playing with the parameters of a standard vanilla sugar cookie recipe the past couple of weeks and have been trying to make the cookies overall lower calorie.

Chocolate Sugar Cookies

8Tbs Butter (800 calories)
3/8 cup unsweetened applesauce (75 calories)
3/4 cup unsweetened bakers coco powder (180 calories)
2 cups white granulated sugar (1546 calories)
1 egg (70 calories)
2 & 3/4 cup white unbleached flour (1252 calories)
1/2 tsp salt
1/2 tsp baking powder
1 tsp baking soda
2 Tbs Vanilla extract

~3923 calories for the batch (through I would just as soon call it 4000 to over estimate)

Set the oven to 375 ºF. Cream together the butter, apple sauce, coco powder, egg, vanilla extract, baking powder, salt, baking soda, and sugar. Divide the flour into several portions. Mix one portion in at a time. Roll dough out to about 3/16" think onto floured baking paper. Cut to desired sizes. Cook in oven at 375 ºF for 10 minutes.

We were able to get ~54.5 cookies out of the last batch. We tend to use fairly large Christmas cookie cutters and roll the dough rather thick. A second egg can be thrown in to give the cookies a more cake like texture if desired, just remember to use less applesauce. If the dough becomes less workable or dry, you can add in a Tbs of apple sauce to compensate.
