Sweet Potato and Kale Patty
2 large sweet potatoes
2 cups finely chopped kale
1 tsp Coriander (ground)
1 tsp Curry Powder
1 tsp Cumin
.5 tsp Cayenne Pepper
1 Cup finely ground bread crumbs (possibly 1.5 Cups depending on the consistency)
Salt and Pepper to taste
1 TBSP Olive Oil
Place sweet potatoes in a 350 degree oven until a fork slides easily out of the potato. The time varies depending on the type of oven you use.
Once potatoes are cooled remove the skin and place in a bowl.
Using a food processor or a sharp knife begin to chop the kale until it is finely chopped.
In a large bowl add roasted sweet potatoes, chopped kale, and seasoning, and mash the sweet potatoes to get rid of any large chunks while mixing all ingredients together/
A little at a time, add in the breadcrumbs, until the mixture begins to firm up
Once you achieve the right consistency begin to form 3 ounce patties
On the stove heat a non-skillet on medium high heat.
Add 1 TBSP of olive oil
Once oil is heated add the patties to the pan
Cook until golden brown about 3-5 minutes per side
Remove from pan and repeat until all patties are lightly browned
Place patties in 350 degree oven and bake for 5-7 minutes to finish
Top with your favorite toppings.
I made a sundried tomato avocado spread for this, served it on a whole grain bun, with crisp lettuce.

I am not a fan of sweet potatoes but I actually liked these. I am an Executive Chef and had to create something for a food committee and my boss is a vegetarian so she asked me to come up with something.1
