Steel Cut Oats recipes

Looking for some good steel cut oat recipes I can cook ahead of time an nuke. Hoping for no milk and low sweetening but without the bland taste. Somewhat lactose intolerant and sweet stuff makes me sick, which has been making palatable recipe searching difficult. I could use lactaid if the recipe rocks enough otherwise.

    I do an overnight, crockpot, steel cut oats recipe that we like. (It makes enough for my husband and me to share; his portion is larger than mine.) I use a small crockpot, the kind you might use to keep a hot dip heated during a party. I put it together at bedtime and it's ready in the morning. My crockpot only has two settings--on and off. If yours has more than that, opt for a low setting rather than a high one.

    1/2 cup steel cut oats
    1 3/4 cups water
    2 tablespoons brown sugar--I actually use a little less
    1 tsp vanilla extract
    generous dash cinnamon

    I like to top with blueberries, toasted almonds and half and half, but you can use whatever lights your fire. Leftovers heat up in the microwave just fine; it's a little clumpy but tastes good.

    Makes 3 servings, 130 calories per serving.

    I really like making over night oats with steel cut.

    oats (1/2 cup)
    unsweetened almond milk (1-1/2 cup)
    protein powder (1 scoop)
    pb2 powder (1 tbsp)
    cacao nibs (1tbsp)
    chia seeds (1tbsp)
    flax seeds (1tbsp)

    I put everything in a jar and shake it up until everything is mixed then let it sit over night in the fridge, by breakfast time it's perfect and it keeps me full all morning.
