Nutrition On-The-Go

Hey, FitnessPals! I'm back to MyFitnessPal after a long haitus. Lost 40lbs the first time and kept it off for three years!

I am looking to exchange recipes for those of us who have busy schedules. Please share your make ahead recipes here!

One to start us off:

Chia Pudding: (serves 3-4)
2 cups Soy Milk
1/2 cup chia seeds
2 tbsp honey
1 tsp cinnamon
1 tsp vanilla extract

Chill in the fridge overnight and by morning it is the consistency of pudding! Enjoy!

    I make the same thing, but in a single serving.
    Since the seeds start to sprout after a couple of days.
    And no one else in my family will touch this stuff.
    Use skim milk and take out the honey.

    I also buy greek yogurt single servings and top it with 2 tbsp of chia and blueberries.
    Just tips for others to read.

    I wouldn't take pudding on the go but I LOVE Chia puddings.

    My favorite so far was Chia in kefir! Super tangy like yogurt but then the Chia gets the thickness going. Yummmm

    My Crockpot is my best friend...

    Tomorrow I am making Picadillo...turn it on before I leave for work come home to finished dinner!
    I typically premake the quinoa I eat on the side too, but that is easy enough to throw in the rice cooker :)

    1 lb ground meat of choice (I prefer lean grass fed beef, but you can use poultry, buffalo, or pork if you prefer)
    1/2 jar manzanilla olives
    1 diced bell pepper
    1 tablespoon capers
    1 cup minced onion
    3 cloves garlic, minced
    1/4 cup minced cilantro
    8 oz can tomato sauce
    1 tsp ground cumin
    1/4 tsp garlic powder
    1 bay leaves
    kosher salt and fresh pepper, to taste

    I like to actually brown my meat and onions the night before...but honestly it is optional, just adds more flavor IMO.

    Throw it all in the crockpot in the morning. Turn it on low. Come home to YUM!

    Serve along side rice or quinoa or on tortillas, or stuffed into peppers

    Double it and have leftovers for a couple days! (this makes a fabulous quesadilla filling the next day)
