    I'm not vegan or vegetarian, but it's something I want to work towards. I'm starting out by cutting out red meat when possible and incorporating tons of fruits and vegetables into my diet. Feel free to add me, I would love some vegan/vegetarian friends on here for inspiration.

    Hi! I went vegetarian about six years ago, but two years ago started to eat meat again. My first go round was terribly unhealthy, but now I'm (mostly) vegan and looking to do it a healthy way this time. I say mostly vegan because very, very occasionally I might have a bit of cheese if other people cook for me. I'd love some friends!

    I am a vegetarian. Now considering going vegan. I do it for the animals. For the environment and for our earth. Animals have a right to live and want to live just as much as we do. Plus an added bonus. When I became a vegetarian 11 years ago my blood values became perfect.

    OK I'll start:

    This recipe is from MyRecipes.com:

    Bulgur with Dried Cranberries

    1 cup coarse-ground bulgur
    2 cups (1/4-inch) cubed peeled English cucumber
    1 cup dried cranberries
    1/3 cup thinly sliced green onion
    1 cup finely chopped fresh flat-leaf parsley
    1 teaspoon grated lemon rind
    1/3 cup fresh lemon juice
    1/3 cup extra-virgin olive oil
    3/4 teaspoon kosher salt
    3/4 teaspoon freshly ground black pepper
    Preparation

    1. Place bulgur in a large bowl; cover with 2 cups boiling water. Cover; let stand 30 minutes or until liquid is absorbed. Fluff with a fork. Add cucumber and remaining ingredients; toss gently to combine.
