    I am a vegetarian. Now considering going vegan. I do it for the animals. For the environment and for our earth. Animals have a right to live and want to live just as much as we do. Plus an added bonus. When I became a vegetarian 11 years ago my blood values became perfect.

    OK I'll start:

    This recipe is from MyRecipes.com:

    Bulgur with Dried Cranberries

    1 cup coarse-ground bulgur
    2 cups (1/4-inch) cubed peeled English cucumber
    1 cup dried cranberries
    1/3 cup thinly sliced green onion
    1 cup finely chopped fresh flat-leaf parsley
    1 teaspoon grated lemon rind
    1/3 cup fresh lemon juice
    1/3 cup extra-virgin olive oil
    3/4 teaspoon kosher salt
    3/4 teaspoon freshly ground black pepper
    Preparation

    1. Place bulgur in a large bowl; cover with 2 cups boiling water. Cover; let stand 30 minutes or until liquid is absorbed. Fluff with a fork. Add cucumber and remaining ingredients; toss gently to combine.

    I take soya protein, cottage cheese, tofu also Whey protein.

    My ideal food plan would be a whole food vegan paleo low-ish carb, adequate protein, high fat diet...I'm pretty sure that's a pipe dream...

    Hello Vegans! I also eat a plant based diet, and would love more MFP Vegans as friends! This will be my first Thanksgiving NOT eating meat, as I have transitioned into the vegan way of eating and LOVE it =)

    This is a new favorite of mine

    Mock Tuna Salad (Chickpea Salad)
    1 can garbanzo beans drained and mashed
    2 TLB Mayo
    2 tsp spicy brown mustard
    1 TLB sweet pickle relish (make sure its not made with high fructose corn syrup)
    2 green onions chopped, or 1/4 cup chopped red onion and or celery, your choice.
    salt and pepper to taste

    Mash beans, then combine the rest of ingredients.
