Protein Plum Muffins
Hi all, thought I'd share this recipe I just made
I used this recipe as a base and then made a few substitutions. I couldn't help myself and tried one as soon as they came out of the oven! It was my first time baking with protein powder and it was definitely a success. Some of them are a little funny shaped on top but I think that's just the way I filled them. I definitely plan on making them again with different fruits.
My version:
200 grams plain flour
75 grams vanilla whey protein powder
1 tsp baking powder
1/2 tsp baking soda
5 grams stevia
2 (98 grams) eggs
100 grams unsweetened applesauce
230 grams plain natural yoghurt (greek yoghurt would also work)
Plums or other fruit (I had 285 grams, original recipe calls for 320 grams)
30ml unsweetened almond milk (I found mine was a little bit thick, you may not need this depending in your protein powder/flour mix)
