Healthy Breakfast Sandwiches?
Anyone have a great recipe for breakfast sausage patties? I love sausage mcmuffins (without egg - I have an allergy) and want to lighten it up. I've tried a couple turkey/chicken recipes but they haven't turned out, mostly that the texture was awful.
And processed cheese - how bad is it? I'm kind of confused by what cheese to eat as while cheddar isn't processed it has way more fat so which is worse?

I don't do sausage much for the health aspect but I do love bacon !LOL!
I like a corn tortillas with 1 egg or 2 egg whites scrambled with onions, red/orange bell peppers, and mushrooms and 1 or 2 slices of bacon. I'm bigger on the wrap idea myself. I'm sure it would taste great as a sandwich though.0 -

Have you tried Jimmy Dean turkey sausage ? Here is the nutro site.Notice the info is for 2 patties.The other site has cheese info.

I don't like sausage so I can't help in that area.
I wouldn't worry too much about the fat in cheese unless you get a lot of your fat from other foods throughout the day. If you are looking to cut back on cals you can use the sargento deli thins...they have between 30-45 calories a less.0 -

Here's my breakfast sandwich:
Orowheat sandwich thin
2 slices Turkey bacon
1/4 C egg beaters
Laughing cow spreadable cheese.
It's 235 calories and is DELISH!0 -

I forgot, you can also use the Boca breakfast patties if you want the sausage. It's "sausage" anyway! lol I prefer the bacon though, but that's me.0

I made these for the first time yesterday. I found the recipe on www.biggestloser.com. I'm in Canada as well and I used lean ground pork but I'm going to make them again with ground turkey. I also doubled the ingredients since my package of pork was almost a pound. It made 8 patties and I calculated about 109 cal. each.
1/2 pound of extra-lean ground pork or pork tenderloin, ground
1 tablespoon minced red onion
1 1/2 teaspoons minced garlic
1/2 teaspoons dried thyme
1/4 teaspoon ground sage
1/4 teaspoon cayenne
1/4 teaspoon ground black pepper
1/8 teaspoon salt
In a medium mixing bowl, combine the pork, onion, garlic, thyme, sage, cayenne, black pepper and salt. With clean hands or a fork, mix well. Divide the mixture into 4 equal parts. Shape each into a ball. On a sheet of waxed paper, flatten one ball into a 4-inch-diameter patty. Repeat with the remaining balls. Place any patties that won't immediately be cooked in a single layer or stacked between sheets of waxed paper in an airtight plastic container. Refrigerate for up to 3 days or freeze for up to 1 month.
To cook, select a skillet that's the appropriate size to hold the patty or patties to be cooked in a single layer. Set the skillet over medium-high heat until it is hot enough for a spritz of water to sizzle on it. With an oven mitt, briefly remove the pan from the heat to mist with olive oil spray. Set the patty or patties in the pan. Cook for 1 to 2 minutes per side, or until just starting to brown and no longer pink inside. Serve immediately.0
