For the OP - if you've been tested for insulin resistance and have an issue, then talk with your doc about how many carbs to eat, etc. A lot of clinics now have diabetes educators that will go over all of it with you.

Aside from that, there's no reason to limit carbs. Some people find it helpful that when they limit their carbs it limits their calories, which helps them lose weight. That's fine if that's what you want to do, but please don't think you have to.

I eat carbs because I'm a runner and I have better runs if I eat a certain amount of carbs.

Since you're just starting out, I would focus more on practicing logging your food and working on decreasing your total calories. Once you have that down then you can start looking at carbs, protein, fat, etc.

Also, no one should be eating <1200 calories - it's difficult to get all the nutrients you need on that low of food intake.

To lose 40 lb, you start by losing 1 lb, then you do that 40 times. I'm at a 40 lb loss since January 25 and I can assure you it's just one at a time. Eat less, move more.
