I've always been told to eat complex carbs pre workout and simple carbs post workout when lifting, but does this apply for days when I strictly do cardio as well?

It doesn't really apply at all as long as your hitting your overalls. I do agree a pre workout meal of complex carbs 2 hours before or a simple carb 20-40 mins before for energy is effective, but post workout simple carbs for the "boost" in insulin to drive nutrients and glucose to the muscle isn't necessary. Just eat a balanced meal when you're hungry post workout1

You don't need to at all.... that's just some bro science.
Now, depending on how your body reacts to carbs... then can be used beneficially before training. For example, I react really well gummy bears, sour patch kids, bottle caps, Twizzlers, pop tarts, etc. I feel more energized after 2-3 servings.
I don't do this all the time... just on my max effort days or when I sleep like trash.
Cardio wise... just eat when you're hungry. Unless you're a top tier elite powerlifter..... don't make basic nutrition rocket science.0 -
