It's grilling season!!

I'm going to a drive-in movie theater this weekend with some friends, and I love bringing my mini grill with and making dinner as we watch the movies. Typically I make hot dogs, and then bring some deli salads and chips with... but I want to try for something a bit more nutritious. The big hang up is that since I'll be like an hour away from home and grilling out of a cooler, I'd prefer not to bring anything like raw chicken breasts with me.

That being said, does anybody have any favorite recipes for either grilling or picnic foods they'd like to share? :)

    Grilled eggplant, onions and bell peppers are amazing! You can wrap them in foil to reduce messiness. With a little bit of marinara, basil and fresh torn mozzarella... mmmmm.

    As for your meat thats up to you since you dont want to bring raw chicken. I was going to suggest a hood marinated chicken but i love grilled pineapple, green onion sticks and mini sweet peppers. You could buy large portobello mushrooms that are stuffed with spinach and some cheese and yummy seasonings with some panko breadcrumbs so theyre premade but you just need to grill them for about 7 minutes yum.

    Corn on the cob? Pre-cook the chicken just below done and finish it off on the grill? I often cut up zuccini/ courgettes, peppers, etc, stick in some garlic and rosemary twigs and wrap it into a silver foil package. The'll steam in their own juice on the grill.

    You could still do hot dogs, they aren't inherently bad if you pick quality ones and you enjoy them. Change up the sides for grilled veg, a nice cucumber salad, etc
