Need help...

As a high school teacher and coach, lunch and dinner (at least during spring football and all of the fall) is what I can grab on the go. I refuse to eat after 7:30pm, and I don't get home until 9 or 10.
So... Here's where I need a hand....
I've lost 23lbs so far keeping a watchful eye on my calorie intake and laying off sodas, breads and pastas. Lunch is usually a 180 calorie (family size) pouch of tuna or 240 calorie pouch of chicken with added mustard eaten right out of the bag and dinner more often than not is about 300 calories of hummus with either fresh mushrooms or carrots.
I mix in different things when I have a chance, but those easy to get at the grocery store eat on the go things above are what I am looking for. I don't want to get bored of them so I need more ideas similar to those.... ANYONE?
