Going vegan and weight gain?!

So I decided to go vegan mid March after being vegetarian for about -5 years. I weigh daily and over a month I go from 61.5-62.5kg (Im 5'8). However since going vegan the scale is now stuck between 62-63.5kg with the exception of two days out of 40 when I went back to 61.5kg. I am so confused as I know I am eating fewer calories and my exercise regime has not changed, if anything due to this 1lb increase I am doing more. I am aiming to get to 60kg but feeling disheartened by this weight gain! Any ideas?

Without looking at your diary, I would take a rough guess that any gain will be down to water weight. With the change in diet and a probable increase in carb intake anything you've gained can most likely be put down to water, that will regulate itself with time. 1/3kg is very minimal gain, my water weight fluctuation can go be anywhere from 3kg plus.
Don't get disheartened, if you are in a deficit and exercising you will loose weigh just be patient.0
