Low calorie strawberry rhubarb jam

I've been making this jam and canning & selling at our local farmers market. People always come back for more. If you've got a lot of rhubarb especially and you don't know what to do with it all, it goes great into this jam!

8 to 8.5 cups of strawberries
8 cups of cut rhubarb
2 cups of sugar

cook in a pot on medium heat for about an hour. Start with the pot covered so it gets juicy, then uncover to cook off some of the water. You can either put it in jars to can it or put it in containers to freeze... since it doesn't last as long as store jam... and leave yourself a container for the fridge.

Total calories are 2,058.. the batch that I measured out for this worked out to be 11 calories a tablespoon.

I made a batch with some blueberries too since I had a bag that was a few years old and starting to get some freezerburn.. great way to use up fruit from the freezer.
