Quick & Easy Vegan Meal Ideas??

I'm interested in eating a mostly vegan diet for health reasons, any quick and easy bfast & lunch ideas would be most appreciated! I have different ideas for dinners, but that requires prep and cook time which when I'm on the go doesn't work unless I made something the night before. I'm allergic to most fruits and hummus is the only other quick fix I like but want to mix it up. Ideas please?

    When I'm really pressed for time, some quick meals I have are toast with almond butter or guacamole (not sure if you're allergic to avocado or not), refried beans mixed with salsa (sometimes I add a tortilla or some shredded cabbage), overnight oats (these require some time, but can be done the night before and grabbed in the AM), or canned lentil soup or chili on a baked potato.

    I'm not vegan, but I like all food.

    It reheats beautifully and you can stuff it in a burrito if you want.

    For breakfast, overnight oats. Just put a 1:1 ratio of oats to liquid and add whatever toppings you like the next morning. I also like avocado toast for breakfast. Spread mashed avocado on toast, top with whatever. I like sea salt and black pepper with a squeeze of lemon.

    For lunch, salad is quick. Especially if you pre-prep all your ingredients. Like cutting all your veg when you get home from the store. I'm also not against the pre-packaged vegan foods like a blt with the vegan bacon and vegan mayonaise. Or a veggie burger you can nuke for like 2 minutes and a bag of chips or apple.
