Healthy Low Carb Recipes please

OK so I have had a lot of trouble losing weight. I have decided to cook all my meals to eliminate processed foods, and to cut out starchy carbs. So no pasta , bread, starchy veggies right now. I am having alot of trouble losing weight so i need to get strict for a little while. I do Hiit training 5x a week .I am so tired of eating meat, veggies, veggie chips, smoothies, cheese, nuts, alomond milk, and eggs. I need some new easy and cheap recipes to spice up my pallate. Please someone help. I food prep on Monday nights. I cook enough food for the whole week. I am just so bored with my selection and I need new ideas to keep me motivated. Can anyone give me recipes???

Just some background information. I haven't lost a pound in a year. I have counted calories, done macros, running, HIIT, and weight training with no luck. I have been taking antidepressants such as celexa, but quit 3 months ago. I read that it causes weight gain and makes it hard to lose weight for some people. For the entire year I tried losing weight, I ate no more than 1200 calories a day. I exercised daily. I am just really frustrated so I am trying again to make changes to get the weight off. If anyone has dealt with this, I could really use advice.

    I peeked at your diary.
    You are doing some very low calorie days (I think I saw 600), then some high days (2,000+).
    IF I ever starve myself, I will binge ! Always !

    One more note: You don't have to be low carb to lose.
    I am high good carb and losing.
    Lots of quinoa, oatmeal with blueberries, barley, farro, chickpeas, beans, even sweet potatoes.
    It's all about the calories, just in case you want to give yourself a break.
    (note: veggie chips are not good on any diet- it's a fake marketer's trick)

    Yes I increased it to 1200. I am trying to incorporate more veggies and protein. I also need healthy fats.

    I got seriously good help by having an open diary.
    They told me to get more lean protein and fiber.
    People here were all sweet. Nothing to fear.

    Todays lunch was baked talipia seasoned with lemon pepper and garlic powder and baked in the oven on a cookie sheet lined with foil and sprayed with non stick spray and broccoli was also on the same sheet in the oven on 350 degrees for 30 minutes with a bowl of cole slaw for a salad is one of my go to for a quick meal. I also have Dannon lite and fit yougurts and carb control shakes daily

    A few things to keep in mind from someone who has had a difficult time losing too:
    1. If you are already close to maintenance it's usually very hard to lose. Not impossible but not easy.
    2. Log everything
    3. Weigh everything
    4. Play around with it and find what works for YOU.
    5. I'm sure others have additional advice but these are all I've got at the moment.

    I'm low carb and a few dishes I love are (mostly just listing ingredients, prepare to your likes)-
    3. Stir fry: use your favorite meat, veggies, and healthy oil (I prefer coconut or ghee). Use spices to taste. This can make various dishes throughout the week just by switching ingredients.
    4. Homemade chilli - i make this with ground beef, fresh tomatoes, tarragon, chopped mushrooms, chipotle spice, 2 chopped Bell peppers, and mozzarella cheese. I will sometimes add sour cream while it's cooling to make it creamy.
    5. Shrimp stew - ghee, saute shrimp, saute veggies, add spice to taste (I like tumeric and Cayenne), baby spinach, add hwc to thicken and make creamy.
    4.spinach berry salad- baby organic spinach, fresh mixed berries, black pepper, tumeric, chia seeds, nuts, ghee as salad dressing, shredded cheese (I use kerrygold Dubliner). If u want more cals or protein add your favorite cut up meat.

    The above are meals (except salad), I make for my family. Usually they take less than 20 mins, except the chilli as I like to let it simmer awhile. They like the dishes enough to get seconds and clean the pots. They may not be exactly lowish carb enough for some but in that case it will be according to what your macros will allow for the day or can be adjusted by ingredient to give you the numbers you are looking for.

    I'm not a cook, never have been. These are dishes I threw together and we love to have again and again.

    Just hang in there and you will lose the weight just try not to eat after 7pm at night and drink plenty of water.
