One step at a time?

Every time I tried losing weight I started out cutting calories and working out at the same time. I know it might just be me giving excuses but is cutting just calories, until I'm near my goal weight and then start excercising realistic?
I think I go into this full force and get overwhelmed. Last time I was excercising for 20 minutes on the elliptical 4x a week and tried my best to stay at my deficit.. but ended up in failure after the scale barely moved.
I was almost 300lbs, cut soda and dropped 20 lbs that month. Once the scale stopped moving and with my wife being on weight watchers I decided I should start counting calories.
It's been 2 weeks and I'm down 8 lbs with just counting calories.
I still want to drop down to 200ish.
Realistic to do it this way or no?
