I have had the big beef ribs before, but this restaurant today had small racks of beef ribs. Any guess on how many ounces of meat "might" be on each rib, and what the calorie count per rib might be?

I hate to be the bearer of bad news, but you're just going to have to make your best guess on this one. The only way to really know is weigh the cooked rack then weigh the leftover bones and log the difference. It's okay to take your best guess occasionally. Not every day, but occasionally.

Approximately 3.76844 ounces of meat on each bone. 12 grams of protein, 5 grams of fat and 8 grams of carbs.

    237 calories per rib

*Note: I made up all these numbers and they are not accurate because there's no way that I can estimate the amount of meat on a rib of which I have not even seen a picture, let alone seen with my own eyes, held with my own hands or weighed on my own scale.

Ummm- not sure if this helps - but I cut 2.6 pounds of fat off a brisket last night while trimming it. It's beef too. I have a picture to prove it. The can of Pam is for scale.

Seriously though - figure 50-90 calories an ounce of meat depending on how lean or fatty it was. If it was sauced, stay in the high range.

Brisket will be done tomorrow night around 6 PM...Mesquite smoked.
