How do you chart a walk/jog/walk with weights workout?

Get a GPS based app like Runtastic that you start when you start your exercise. It has settings for walking so if you're mostly walking I would use that setting or if mostly jogging use running setting. It should compensate or adjust calories burn to account for distance and speed. It can also sync to MFP so you don't need to remember to input the results. As for the weights, I don't think it adds much additional burn so I wouldn't worry about logging it but consider it as an added unlogged bonus toward your goal. Its the results that really count.0

Just start/stop a run activity on my watch, then go into the notes later (on the phone or pc) and put in that you carried weights. With a chest strap, I'd expect the additional work from the ballast to show up in my HR/HRV.0
