I eventually want the body builder look but cannot stop doing atleast 1 hour of HIIT each day because of its benefits to my psychii.
Not many people can become body builders by doing this much endurance training from my understanding. And i dont really want to eat large amounts of food either.

Eat a lot of food. I cycle a lot and still have the look...0

Eat more and follow a progressive lifting program. You may find if you are following an appropriate program and putting the effort in you won't have the energy for an hour of HIIT.0 -
At some point you have to make a decision. You either do what you have to do to achieve the look you want or you give up on that goal. It's an adult decision you have to make. This sometimes means sacrifice and for you that means cutting back on the cardio plus eating more.3
