Fixing it up!

Do you ever plug your recipes in and think "ah hellz no" and start looking to fix it? I just cut my chicken and dumplings recipe down by like 200 calories!

    Recipes are just guides and launch pads for new Ideas. Reminds me that yesterday, I was looking at the introduction to Harold McGees On Food and Cooking. He says;
    "The great virtue of the cook's time-tested, thought-less recipes is that they free us from the distraction of having to guess or experiment or analyse as we prepare a meal. On the other hand, the great virtue of thought and analysis is that they free us from the necessity of following recipes, and help us deal with the unexpected, including the inspiration to try something new. Thoughtful cooking means paying attention to what our senses tell us as we prepare it...
    So sindirella, I do think that sometimes. And I think that is when I'm at my very best.
