Vegan Broccoli Recipes Needed, Please!

I just recently acquired a taste for broccoli. I am stuck with just steaming it and adding Smart Balance and Nutritional Yeast. It's yummy enough like that, but I'd love some other healthy, vegan ideas :)

    I think every veg deserves to be roasted. Recently I tossed broccoli florets and whole cloves of garlic in olive oil, little s & p and roasted it til it made my toes curl. :D Garlic is considered a vegetable in my house, so we use a head (or sometimes two) with a bunch of broccoli.

    Little tip: When dealing with roasting whole (peeled) cloves of garlic, it usually helps to start them first and when they start getting just a bit tender but not quite golden, add your other veg.

    stir fry in little olive oil with lots og ginger ,garlic soy sauce ,vinegar,pepper ,salt and other veggies of ur choice...i add tofu too..but i saute my tofu and make it brown...serve with rice ..

    Creamy broccoli soup:

    1 onion
    1 celery stalk
    Garlic clove
    1 tbs olive oil
    4 cups chopped veggies 1/2 to 1 inch. ( I like broccoli and carrots).
    5 cups water
    2 tbs of light miso or 2 veg bouillon cubes.
    1 1/2 tbs tahini

    Ground pepper

    Chop and fry garlic, celery and onion.
    Boil water
    Create soup without tahini
    Blend soup
    Take small amount of soup and mix in a separate bowl with tahini. Add to large pot, stir and enjoy!



    (For people who eat dairy and want a low fat version add a potato with the five cups of veggies, stir with milk or skim milk powder at the end)

    I love it steamed, baked, roasted, raw, just about anyway! I. Know that doesn't help. It's also good in stirfry. Just add some other veggies (your choice) and stirfry them in hot oil.

    Add it to mac and cheeze (especially if you roast it) or put just put cheezy sauce on top of it (I'm planning on having it this way over rice with buffalo tempeh from Isa Chandra Moscowitz's Appetite for Reduction- let me know if you want the recipes). Basically good with any type of vegan cheezy or alfredo type sauce or added to pasta. I also like it steamed and served with pan-fried tofu in a peanut sauce. I've even added broccoli to hummus, just steam and toss in the food processor and pulse after you've puréed the chickpeas.

    I also have two different recipes for broccoli cheeze soup. One is from The Uncheese Cookbook and the other is from Chloe's Kitchen. Both are yummy, especially the Uncheese, but it is a bit more intensive and decadent than Chloe's.
