How would you describe your normal daily activities?

I am a stay at home mom of 3, BUT I do strength training for 15-30 minutes daily and cardio (duathlon training) for :30-1:30 hr daily. I'm confused at what I put. Do I put Active or Very Active and then log my workouts, because that puts be in the 2500 calorie range.

Your Activity Level factors in your daily life activity without any purposeful exercise and includes what your job is like. Since you are a stay at home mom, I would put Sedentary and then log your workouts if you know how many calories they are burning. If you don't know how many calories you are burning, I would put Active or Very Active.1

assuming the kids are little and have normal activity levels for little kids, a stay at home mom certainly isn't sedentary! I would choose lightly active and then log purposeful exercise on top of that.2
