Not Another Cauliflower Donut Thread...
.... but I DID make protein chocolate chip cookies AND protein snickerdoodle cookies. Didn't quite last like Lenny's and Larry's, but they're certainly tasty enough as a replacement when I don't want to spend the money.
And there's no funky ingredients in them.
Recipe for Protein Snickerdoodle Cookies:
1/3 cup oat flour
2 tbsp. coconut flour
1/2 scoop of PE Science snickerdoodle protein powder
1/2 tsp baking powder
1 tsp vanilla extract
1 egg
1 tsp truvia (can use more if you like them sweet)
1/8 - 1/4 cup of skim milk
Mix all ingredients and grease a cookie sheet.
I baked mine at 350 for about 10 minutes, but I think I slightly over baked them. I made my cookies bigger -- this batch served 4, but I recommend the serving size as 6.

1/4 cup skim milk
1/2 tsp baking soda
3 pieces of hersey's sugar free dark chocolate (can add more if you want them more chocolatey)
(the recipe called for sugar free chocolate chips, but I could not find any in my grocery store)
Combine all ingredients and bake at 350 for 8 minutes. Again, serving size on this batch was 4, but I recommend doing 6.
I ate mine fresh out of the oven yesterday and I thought they were pretty good. Might add more sweetener next time around.
